The history of Caseificio Rosso began in 1894 in Sordevolo, in the heart of the Biella Alps: a family that has preserved and passed down the art of cheesemaking for generations, combining passion, the pursuit of flavor, and respect for the environment, animals, and people.
Rosso cheeses are the result of a supply chain controlled at every stage: from milk to aging, all the way to the consumer's table. This process guarantees consistent quality, authenticity, and identity for every product.
From pasture to table, every wheel is born from the expert hands of those who make their craft a passion. Two stories intertwine in cheese: that of the land, the grass, and the flowers, and that of man and his animals. Fresh milk is collected daily from small farms selected for their dedication, love of animals, and respect for tradition.
This precious raw material then reaches the dairy, where, using traditional methods, the cheese is shaped. Its journey continues in the cool aging cellars, where time and care complete the process, giving the products their unique aromas and flavors. Complete control of the supply chain guarantees the origin, quality, and personality of each cheese.
The Pier Luigi Rosso Dairy is located in Biella, where the Oropa Valley meets the Cervo Valley, in the heart of the Biella Alps. The maturation and aging department is located in the westernmost part of the Biella area, in the Alta Valle Elvo—the Rosso family's homeland.
Every day, milk is collected from 30 Biella farms, which traditionally raise the Pezzata Rossa d'Oropa, a native cattle breed now at risk of extinction. Biella farmers, with passion and dedication, have been preserving its purity and vitality for years.
All Rosso artisanal cheeses are made with excellent raw materials and represent a heritage of authentic flavors that, over time, have received numerous national and international awards.
