CASEIFICIO TERRE DEL GIAROLO - The rediscovery of a lost flavour: Montébore Slow Food Presidium
Rediscovering ancient flavours
It is in the Tortona hills area, precisely in Val Curone, province of Alessandria, that the Caseificio Terre del Giarolo was born, a dairy that has been able to recover a “lost flavor” of these wonderful lands: Montébore (Slow Food Presidium from 2001 to 2023), an ancient cheese, among the rarest in the world, whose origins are lost in the centuries.
The production of the famous Montébore is a tradition of the Grattone family who, with the Dairy, not only enhances and promotes a historical identity but also offers a selection of top-quality cheeses, produced only with raw sheep, cow and goat milk from the uncontaminated pastures of the surrounding area and from the nearby areas of the Ligurian-Piedmontese Apennines.
The exceptional quality of the cheeses is the result of artisanal production practices, obsessive attention to the raw materials and a supply chain that is always rigorously controlled and monitored.
These are the cornerstones on which the Caseificio's philosophy is based, which aims to achieve a balance between tradition and innovation in production.
