    The Solaia agricultural company was founded in 1964 in San Quirico in Collina, a natural balcony overlooking the Val di Pesa between the municipalities of San Casciano and Montespertoli, in the Florentine Chianti area.

    The olive groves extend over an area of ​​approximately 25 hectares, mostly grown with the traditional method, but also with an experimental super-intensive system. The cultivated varieties are those that give so much prestige to Tuscan quality extra virgin olive oils: Frantoio and its variant Correggiolo, Leccio del Corno, Leccino, Pendolino, Maurino and finally Moraiolo.

    In small numbers compared to the other cultivars there are also Coratina, Piangente and Rossellino.

    The olives are pressed within a few hours of harvesting, to avoid the activation of maceration and fermentation phenomena which would negatively affect the olives already at the start, transported to a modern and highly technological mill where the famous and award-winning extra virgin olive oil of the Estate.
