How was Monferrato Truffle born?
Monferrato Truffle was born from the desire to enhance an excellence of our territory - the truffle - and bring it to the tables of those seeking quality, authenticity and a profound gastronomic experience.
The idea is the result of our passion for Piedmontese food and wine culture and a strong bond with Monferrato: an authentic land, often less known than other truffle-producing areas. We wanted to combine respect for nature, product quality and artisanal care in every phase, from harvest to sale.
For us, truffles are a symbol: rare, precious, the fruit of time and sensitivity. We are not only interested in selling them, but also in telling about them, creating links between hunters, cuisine and customers. Our goal is to spread an accessible, but never banal, truffle culture.
And the role of Italian Green Brand?
Italian Green Brand is much more than a holding: it is a platform of values that focuses on sustainability, territorial identity and quality.
In the Monferrato Truffle project it had a strategic and cultural role. It was born to support excellent Italian companies that believe in an ethical model and a transparent supply chain. Our brand embodies these principles, aiming for absolute quality, but always in balance with the environment and people.
For us, doing business means taking care of: the territory, the supply chain and local communities.
Why Moncalvo?
Moncalvo is not only the place where we operate: it is home. Living here has allowed us to grasp its true essence — slow rhythms, silences rich in meaning, a discreet beauty that can be breathed every day.
Regenerating this village was not a strategic operation, but a cultural, intimate gesture. It is a way to restore value to what surrounds us. Moncalvo has a strong history, a lively, authentic community. It is the perfect place to start again, because here tradition and innovation can truly coexist.
With Monferrato Truffle we want to do much more than promote a product: we want to tell a different idea of territory. A territory lived, protected, shared.

What is the connection between truffles and Monferrato?
Truffles are an integral part of the identity of Monferrato, although often undervalued compared to other areas. This territory hides some of the most suitable truffle-producing areas, thanks to a unique ecosystem made of gentle hills, calcareous soils and mixed forests.
But the strongest bond is with people. Here, truffle is a family tradition, made of ancient gestures, shared silences and respect for nature. It is a knowledge passed down, which tells the agricultural soul of these hills.
With Monferrato Truffle we want to give voice to this tradition: supporting the trifolao, promoting a short supply chain, reinvesting in the territory without distorting it. For us, the truffle is a bridge between past and future, between land and culture.
Is the recovery of the village also a social act?
Yes, the recovery of Moncalvo is for us a gesture of responsibility. We do not want these places to become only postcards to admire: we want them to remain alive, inhabited, generative.
This is why we have involved the local community right from the start: we collaborate with truffle hunters, agricultural companies, artisans and young professionals in the area. We want to build a system that generates widespread value, step by step.
The idea is to reactivate spaces not only to sell, but to tell the story of the territory, host experiences, train and welcome those who want to rediscover Monferrato with a new look. A village truly regenerates only when people return to live there.
How do you enhance the environment?
For us, the environment is not just a resource: it is the basis of everything. Working with truffles means respecting nature and its times, listening to those who really know those woods.
We implement sustainable choices at every stage:
- Harvesting respectful of seasonality
- Protection of biodiversity and symbiotic plants
- Short and local supply chain to reduce environmental impact
- Sustainable packaging, with recyclable or compostable materials

What does it mean to work with truffles today?
It means facing a double challenge: on one side a demanding market, on the other nature, which requires listening and respect.
It all starts with the trifolao we work with: expert local hunters who know the forest like a part of themselves. It’s not enough to find a truffle — you need sensitivity to pick the right moment, without damaging the truffle ground.
Our work begins in the woods, but continues with rigorous selection: each truffle must be ripe, fragrant, fresh. The biggest challenge is to guarantee consistency in a natural and unpredictable product. But it is precisely this uniqueness that makes it so fascinating.
Do you collaborate with local truffle hunters?
Yes, and with conviction. We do not dig truffles directly because we believe in the value of those who have known and lived the land for generations.
Our relationship with truffle hunters is based on trust and respect. They hold ancient knowledge, which they share generously. This network of hunters is the beating heart of our project: it guarantees authenticity, quality and a direct link with the territory.
Do you also offer processed products?
Yes, alongside fresh truffles we offer products such as creams, oils and condiments designed to enhance the flavour of truffles in the kitchen.
We follow every stage of production with attention: from the choice of raw materials to recipes, up to packaging. We collaborate with trusted artisans who share our standards and our passion.
Each product tells a story of care and authenticity, always keeping intact the scent and respect for the main ingredient: the truffle.

Do you have any experiences or visits planned?
Yes, it is a project we care a lot about. We want to open the village to immersive experiences: nature trails, meetings with truffle hunters, field discoveries and authentic tastings.
It's not just about tasting a product, but about telling its soul. We believe that experiencing the territory with all the senses is one of the truest ways to convey value and beauty.
